How are natural colours used?

Some natural colours can be used directly in a food or beverage, while others need a certain formulation. It all depends on the specific properties of the colour. For use in aqueous applications, oil-soluble colours such as carotenoids, for example, first need to be added to an oily phase and then made water-soluble using suitable emulsifiers. How do cloud emulsions work?

Cloud emulsions give originally colourless beverages a whitish, cloudy appearance, or clear coloured beverages a naturally cloudy look. This effect is produced by tiny oil droplets that are added to an aqueous solution and refract the light. Our emulsion experts have the specific expertise to combine the best possible cloudiness with the greatest stability.
